A creamy, Yin-nourishing soup


This recipe is predominantly Yin-nourishing. Milk, wheat and butter are all Yin-nourishing while watercress and milk are Blood-nourishing. The dairy and wheat can tend to accumulate dampness however, so this recipe is not suitable if you have lots of damp (though the inclusion of onion offsets this a little).


1 onion
420g watercress, washed and chopped
40g butter
1 tbsp flour
450ml whole milk
salt and pepper to taste


Melt a quarter of the butter in a large saucepan. Add the onion and cook on a low heat until soft but not coloured, add the watercress and cook for a couple of minutes.

In a separate pan melt the remaining butter then add the flour and cook for about minute before adding the milk, a little at a time, stirring regularly until thickened. Pour over the watercress and stir for a couple of minutes.

Pour into a blender and blend until smooth.
