Kale is Blood-nourishing while pine nuts nourish Qi and Yin. Both are warm and this is balanced by the lemon which is cold and also benefits Liver, Spleen and Kidney, all of which are involved in the production of Blood.
1/2 packet kale
handful pine nuts
squeeze of lemon
(Note this recipe is marked as nut free. Pine nuts are not really nuts but are often packed in factories with other nuts so take care to review the packaging if you have a nut allergy.)
Toast the pine nuts in a dry pan until just beginning to brown, then remove and set aside.
Add a drizzle of olive oil to the hot pan and fry the kale for a couple of minutes before adding a splash of water. Cover (occasionally adding a little more water if necessary) for about 5 minutes until the kale is cooked. Add the pine nuts, squeeze over the lemon juice and serve.
