An Indian-spiced cooling salad to balance hot dishes or to clear Heat

Energetics

Tomatoes and lemon are energetically cold, so a small amount of mustard seeds, garlic and paprika offset the cooling nature a little to prevent it being too cold. They also help move the Qi and Blood and give an Indian flavour. Coriander leaf also gives flavour as well as stimulating the appetite and the digestive organs.

Ingredients

Serves 2

3 medium tomatoes, sliced, or a handful of halved cherry tomatoes
1 small clove garlic, finely miced
2 slices lemon, halved
2/3 tsp mustard seeds
2/3 tsp paprika
1/3 tsp salt
small handful coriander leaf, chopped

Method

Heat a small frying pan. Add 1 tbsp oil, the mustard seeds, paprika and salt. Fry for a few seconds until the mustard seeds start popping. Add the garlic then a few seconds later the tomatoes, lemon and stalks of the coriander.

Fry for about 1 minute and serve, sprinkling over the remaining coriander leaves.
