Thyme, Ginger and Lemon are all phlegm-resolving. Honey sweetens the tea and is mildly antibacterial. If you think you would benefit from more antibacterial properties, use Manuka honey (the strongest you can find), but don’t stir it into the tea, just eat a teaspoonful separately.
Thyme is warm, Ginger is hot and Lemon is cold. Together they are fairly balanced for temperature, but you may wish to change the balance to suit your condition. If you have significant amounts of internal heat, omit the ginger. If you are particularly cold, omit the lemon.
3 cups water
2 tsp fresh thyme
1cm root ginger
1 tsp honey (optional)
Boil the water in a pan. Crush and add the thyme, simmering for 5 minutes. Slice the ginger very finely and add to the pan, simmering for a further 10 minutes. Squeeze in the lemon, stir, strain and serve. Drink 2-4 cups per day until the phlegm clears.
